Crème Brûlée: A Love Story with a Touch of Vanilla.

It's amazing how certain flavors can transport me to places and memories in my mind within seconds. The moment I start to smell the fragrant aroma of vanilla combined with caramelizing sugar in my kitchen, it immediately takes me to thoughts of celebration and a heart filled with love, as this French dessert I'm going to tell you about today, Crème Brûlée, is my husband's favorite.

I remember very well the first time I decided to learn how to make a Crème Brûlée. My husband and I had just gotten married, and I wanted to surprise him with his favorite dessert because it was the first time we would be celebrating his birthday living outside of Mexico. My mom quickly shared her recipe with me, and I embarked on the adventure of recreating this delicious dessert in my kitchen every year.

Crème Brûlée is a simple process with only four ingredients, but it's extremely finicky. It's a short procedure, but it requires all your attention to monitor the exact temperature to achieve that thick and velvety consistency. With so few ingredients, it's essential to pay attention to details like adding vanilla seeds, using organic eggs and heavy cream, as well as using high-quality sugar to achieve that delightful crispy caramel layer.

Today, I'm sharing the recipe in collaboration with Zulka® Morena Pure Cane Sugar, the perfect ally to sweeten the cream consciously and subtly and achieve the delicious crispy caramel layer that accompanies it.

Recipe:

Ingredients:

2 cups of heavy cream

1 tablespoon of vanilla (including seeds)

5 tablespoons of Zulka® Morena Pure Cane Sugar

4 egg yolks


Instructions:

1.- Preheat the oven to 325 degrees Fahrenheit.

2.- In a saucepan, heat the heavy cream and vanilla. Don’t let it boil.

3.- In a separate bowl, mix the Zulka® Morena Pure Cane Sugar and egg yolks, then pour them into the cream mixture and combine well.

4.- Divide the mixture into 5 to 6 individual ovenproof molds.

5.- Bake in a water bath for 40 to 50 minutes or until set.

6.- Let them cool, then refrigerate for at least two hours.

7.- To serve, sprinkle with Zulka® Morena Pure Cane Sugar and use a torch to melt and caramelize the sugar until it becomes crispy. Serve immediately.

Pro Tip:

To achieve a thicker caramelized layer, lightly heat the cream with the torch before sprinkling the sugar. Then, evenly sprinkle the sugar and briefly brown the sugar without caramelizing it completely. Next, apply a second layer of sugar and caramelize it with the torch until it's golden.

Every year that passes, I become more convinced that what's important in life is enjoying those simple, love-filled moments we create around food with family and friends. But most importantly, it doesn't have to be a celebration or a birthday to have them. So, starting today, this dessert will be in my kitchen much more often than just once a year.
